A member of the night shade family that grows hanging from the vine like tomatoes, this little purple vegetable is full of many antioxidant compounds that contribute to a healthy diet.
Like chlorogenic acid, an antioxidant that fights cancer, lowers bad cholesterol, and has anti-microbial and anti-viral properties. Another compound called nasunin, found in the skin of the eggplant, is thought to be responsible for promoting heart health and protecting cell membranes.
If that isn’t reason enough to add eggplant to your diet, it is also loaded with fiber, vitamins and minerals.
In Dominica’s lush tropical environment, eggplant grows year-round and can be found at the local markets in abundance. At Rosalie Bay, it is a staple in our grilled vegetables and may be found in soups, stir fries, pasta, pizza and as one of our stuffed veggies.
