Happy October! Vibrant cayenne peppers are currently growing on the grounds of our nature resort. Known as “piment zozio” in Creole, cayenne peppers thrive in a warm climate and grow naturally in our tropical environment.
Known as a hot and popular spice, cayenne pepper also has many health benefits when used in moderation. The fruit of the plant is used to make medicine and may help to relieve:
- toothaches
- seasickness
- fever
- muscle spasms
- problems with digestion
- sinus infections
- and more
If you like a little heat, turn up the flavor of your cuisine by sprinkling cayenne pepper into your dishes at home. And, try this “Lava” Cake recipe provided by Chef Seraphine.
Lava Chocolate Cake
Ingredients
- 8 tbsp. unsalted butter
- 5 oz. semi-sweet chocolate
- 3 oz. bitter sweet chocolate
- 3 tbsp. Cocoa powder
- 1 ½ tbsp. espresso powder
- ¼ tsp. Cayenne pepper
- 3 large eggs
- 1 ¼ cup sugar
- ¼ tsp. Salt
- 2 tsp. Vanilla extract
- 1 cup all-purpose flour
- Pecans (optional; to taste)
Directions
- Preheat the oven to 350 degrees.
- Combine the butter and 8 oz. chocolate in a bowl. Melt and stir.
- Once melted, add the cocoa powder, espresso powder and cayenne pepper. Let cool.
- In another bowl combine eggs, sugar, salt and vanilla extract.
- Add in the cooled chocolate mixture and stir.
- Add flour and stir just until combined. Add pecan if desired.
- Bake for 6-7 minutes in single molds. You can serve 6 large single molds or 15 small single molds.
