Congratulations to Chef Assistant Lester George who was first-runner up in the first annual Iron Chef Dominica competition earlier this month as part of Dive Fest 2012. The judges, who included restaurateurs and tourism affiliates, praised his skill and artwork.
Lester joined four other chefs from Dominica in the public cooking competition. The theme ingredient was Lionfish to raise awareness of the invasive fish, which is taking over the reefs.
The competition tested the participants creativity, culinary skills, artistry and speed. Dishes were judged based on presentation, skill, showmanship, diversity of dishes, creativity, and taste.
The chefs had 30 minutes to create an appetizer and main course using the theme ingredient, which was revealed only 15 minutes prior to the competition.
Lester produced a Lionfish Ceviche appetizer and an entree of Pan-seared Lionfish with a light curry sauce. He is from the nearby village of Grand Fond and been on staff at Rosalie Bay Resort since for almost two years as the Assistant Chef/Pastry Chef.
